Judul ArtikelPENGEMBANGAN PANGAN LOKAL BISKUIT TALAS (Colocasia esculenta)-TERIGU (Triticum aestivum) DENGAN PENAMBAHAN TEPUNG KEONG (Pila ampullacea) UNTUK BALITA KURANG ENERGI PROTEIN
AbstrakLatar Belakang: Kurang Energi Protein (KEP) pravalensinya tinggi di Indonesia. KEP membutuhkan intervensi makanan tambahan seperti biskuit. Penelitian ini bertujuan untuk mengembangkan produk makanan tambahan biskuit talas-terigu dengan penambahan tepung keong sawah tinggi protein serta memiliki nilai organoleptik yang disukai. Metode: Penelitian eksperimental faktorial menggunakan Rancangan Acak Kelompok (RAK). Faktor yang diteliti terdiri dari 2 faktor yaitu: Proporsi tepung komposit talas-terigu (P) 50:50 (P1); 60:40 (P2); 70:30 (P3); 80:20 (P4), dan persentase penambahan tepung keong sawah (K) 7,5% (K1) dan 15% (K2). Terdapat 8 kombinasi perlakuan yang diulang 3 kali sehingga diperoleh 24 percobaan. Variabel yang dianalisis terdiri dari variabel kimia (kadar air, kadar abu, lemak, protein, dan karbohidrat by difference) dan variabel organoleptik (warna, aroma, tekstur, flavor, dan kesukaan). Analisis variabel kimia menggunakan Uji F (95%) dilanjutkan Duncan Multiple Range Test (DMRT) 5%. Analisis variabel organoleptik menggunakan Uji Friedman dilanjutkan Uji Banding Ganda 5%. Kombinasi perlakuan terbaik menggunakan Uji Indeks Efektifitas. Hasil Penelitian: Perlakuan terbaik adalah P2K1, yaitu biskuit dengan proporsi tepung komposit talas-terigu 60:40 dan persentase penambahan tepung keong sawah 7,5%. Kandungan energi 368kkal/ 100gram; kadar air 6,35%bb; kadar abu 1,57%bb; lemak 2,08%bb; protein 11,20 %bb; karbohidrat by difference 78,80%bb; warna 3,3 (cokelat); aroma 4,8 (netral); tekstur 4,2 (netral); flavor 4,7 (netral); kesukaan 4,6 (netral). Kesimpulan: Perlakuan terbaik yaitu biskuit P2K1 memberikan persen (%) kecukupan protein balita KEP usia 1-3 tahun 32,2% dan 4-5 tahun 23,9% dan persen (%) kecukupan energi balita KEP usia 1-3 tahun 30,3% dan 4-5 tahun 21,3%
Abstrak (Inggris)Background: Protein Energy Malnutrition (PEM) is high in Indonesia. PEM required additional feeding interventions such as biscuits. This study aimed to develop additional food products in the form of taro-wheat flour biscuits with the addition of high protein snail-fields flour and has a preferred organoleptic value. Method: This factorial experimental study used Randomized Block Design (RAK). There were 2 factors tested, namely: The proportion of composite taro: wheat flour (P) 50:50 (P1); 60:40 (P2); 70:30 (P3); 80:20 (P4), and the percentage of adding snail-fields flour (K) 7.5% (K1) and 15% (K2). There were 8 treatment combinations repeated 3 times so that 24 samples were obtained. Variable which is analyzed consist of chemical variables (moisture, ash, fat, protein, carbohydrate bu difference) and organoleptic variables (color, aroma, texture, flavor, likes). Analysis of chemical variables used F test (95%) and then continued with Duncan Multiple Range Test (DMRT) 5%. Analysis of organoleptic variable used Friedman Test and then continued with Double Compare Test 5%. The best treatment combination used the Effectivity Index Test. Result: The best treatment was P2K1, in which biscuit had proportion of the composite taro-wheat flour 60:40 and the percentage of addition of the snail-fields flour 7.5%, with energy value 368 kcal/100g; moisture 6.35%bb; ash 1.57%bb; fat 2.08%bb; protein 11.20%bb; carbohydrate by difference 78,80%bb; 3.3 color (brown); aroma 4.8 (neutral); texture 4.2 (neutral); flavor 4.7 (neutral); likes 4.6 (neutral). Conclusion: The best treatment of P2K1 biscuits gave percent of protein adequacy RDA 32,2% for age 1-3 years old and also 23,9% for 4-5 years old and percent of energy adequacy RDA 30,3% for age 1-3 years old and also 21,3% for 4-5 years old.
