| Abstrak | Sorgum (Sorghum bicolor) merupakan bahan pangan alternatif pengganti beras dengan kandungan karbohidrat 83%, lemak 3,5%, dan protein berkisar 8-12%. Kandungan protein sorgum tidak kalah dengan kandungan protein beras atau bahan pangan lainnya. Permasalahan sorgum antara lain terdapat tanin pada biji, yang dapat menghambat metabolisme pada tubuh manusia atau hewan yang memakannya. Penurunan kandungan tanin biji sorgum antara lain dengan metode sosoh. Penelitian ini bertujuan untuk menguji kinerja alat mesin penyosoh tipe abrasif PS-2 pada proses penyosohan sorgum. Pengujian kinerja mesin peyosoh sorgum tpe abrasif PS-2 meliputi kapasitas penyosohan, kualitas penyosohan, rendemen hasil keluaran mesin penyosoh serta besarnya kadar tanin setelah proses penyosohan. Hasil uji kinerja yang dilakukan mesin ini memiliki kapasitas untuk sorgum merah rata-rata sebesar 18,2796 kg/jam dengan rendemen rata-rata sebesar 81,02% dan untuk sorgum putih rata-rata kapasitasnya sebesar 20,028 kg/jam dengan rendemen rata-rata sebesar 68,56%. Persentase biji sorgum merah dan putih utuh setelah disosoh masing masing 89,86092% dan 79,9916%. Besarnya kadar tanin setelah mengalami penyosohan hampir mendekati 0% yaitu untuk sorgum merah sebesar 0,5068% dan sorgum putih sebesar 0,1131%. |
| Abstrak (Inggris) | Sorghum (Sorghum bicolor) is an alternative food substitute for rice which contains an 83% carbohydrate, 3.5% fats and protein ranging from 8-12%. The contents of sorghum protein are not inferior to the contents of rice protein or other foods. Sorghum problems are it has tannin on seeds, which can hinder of metabolism in the human body or animals that eat it. The decline in the content of tannin sorghum seeds among others with the hulling methods. The purpose of this research is to test the performance of a machine tool filter type with an abrasive PS-2 to the process of hulling sorghum. Performance testing machine hulling sorghum type abrasive PS-2 includes a filtered capacity hulling, yielding the result of output hulling machine and the magnitude of the level of tannin after the process of hulling. The results of the test performed in this machine having the capacity to average of the red sorghum is 18.2796 kg/hour with yield average 81.02% and for white sorghum average capacity of 20.028 kg/hour with an average yield of 68,56%. The percentage of the seeds of sorghum red and white after hulling is 89.86092% and 79.9916%.
