| Abstrak | Penelitian dengan judul “Analisis Karakteristik Ternak yang dipotong dan Pendapatan yang diperoleh pada Warung Sate Kambing di Purwokerto”. Penelitian dilaksanakan mulai tanggal 29 Agustus 2018 sampai dengan 07 Oktober 2018. Tujuan penelitan adalah untuk mengetahui karakteristik ternak yaitu kambing dan domba yang dipotong dan analisis pendapatan usaha warung sate per ekor ternak di Purwokerto.Teknik pengambilan sampel dilakukan denga metode survei dan pengambilan data sekunder terhadap warung sate di Purwokerto. Cara pengambilan sampel responden yaitu menggunakan purposive sampling. Sampel diambil sebanyak 6 warung sate kambing di Purwokerto. Variabel yang diamati dalam penelitian ini yaitu karakteristik ternak yang meliputi jenis ternak yang dipotong (kambing atau domba), umur ternak, jenis kelamin ternak, bobot ternak, bobot potong, bobot karkas, bobot daging, jumlah tusuk sate yang dihasilkan, persen bobot untuk gulai dan variabel terkait yang meliputi biaya dan penerimaan. Pemilik warung sate di Purwokerto tidak mempermasalahkan jenis ternak yang dipotong selama masih memenuhi standar kualitas yang baik dari ternak kambing ataupun domba. Umur ternak yang dipotong warung sate di Purwokerto yaitu umur muda 3,9 bulan. Jenis kelamin ternak yang dipotong di warung sate di Purwokerto seluruhnya adalah betina. Tingkat keuntungan yang diperoleh pemilik warung sate didasarkan oleh harga jual produk. Usaha warung sate kambing di Purwokerto untuk per ekor ternak memberikan keuntungan sebesar Rp 390.340,00. |
| Abstrak (Inggris) | This research is entitled “Analysis of Characteristics of Animal for Satay and Income of Goat Satay House in Purwokerto”. The research was done on August 29th until October 07th 2018. The purpose of this research is to find out the characteristics of animal, i. e goats and sheep and analysis of the income of the satay house per animal in Purwokerto. The sampling technique was done by survey method and secondary data collection on satay house in Purwokerto. Samples were taken purposively as many as 6 goat satay house in Purwokerto. The observed variables in this study were animal characteristics which included the type of animal (goat or sheep), animal age, animal sex, animal weight, slaughter weight, carcass weight, meat weight, number of skewers produced and variables costs and revenue. The main consideration for slaughtering was the quality of the animal, regardless of its type whether goat and sheep. The age of animal slaughtered were 3,9 months. The sex of the animal were all female (doeling and ewe lamb). The level of profit obtained by the satay house owners is based on the selling price of the product. The business of goat satay house in Purwokerto for each animal provides profit of Rp 390.340,00. |
