| Abstrak | Tahu merupakan salah satu jenis makanan sumber protein dengan berbahan dasar kedelai. Usaha pembuatan tahu memiliki prospek yang besar untuk dikembangkan sebagai sektor riil yang mampu menopang dan meningkatkan kesejahteraan bagi masyarakat Indonesia. Desa Selanegara merupakan sentra industri tahu di Kabupaten Purbalingga. Usaha industri tahu di Desa Selanegara belum mengalami perkembangan karena pendapatan yang diperoleh terbilang sedikit, kondisi ekonomi mereka masih belum sejahtera. Penelitian ini bertujuan untuk 1) Menganalisis besarnya biaya, penerimaan dan pendapatan bersih yang diperoleh perajin 2) Menganalisis besarnya batas bawah pendapatan yang diperoleh perajin 3) Menganalisis kondisi usaha tahu terhadap batas bawah harga. Penelitian dilaksanakan pada bulan September-Oktober 2019. Penentuan responden dilakukan dengan sensus dan pemilihan lokasi dilakukan secara purposive. Metode penelitian yang digunakan adalah metode survei dan analisis yang digunakan meliputi analisis biaya dan pendapatan, analisis batas bawah pendapatan, analisis pendekatan marjinal dan analisis deskriptif. Hasil penelitian menunjukkan bahwa: (1) Perajin tahu di Desa Selanegara memperoleh rata-rata pendapatan bersih sebesar Rp3.988.172 dengan rata-rata biaya produksi sebesar Rp19.600.141, rata-rata penerimaan sebesar Rp23.588.313 dengan jumlah tahu kecil yang terjual rata-rata sebanyak 54.100 potong, tahu sedang 9.341 potong dan tahu besar 2.435 potong. (2) Rata-rata batas bawah pendapatan sebesar -Rp2.207.630, dan terdapat peluang kerugian. (3) Kondisi usaha tahu di Desa Selanegara rata-rata mengalami kerugian apabila menjual tahu goreng dengan harga batas bawah tahu kecil Rp190/potong, tahu sedang Rp769/potong dan tahu besar Rp1.666/potong, meskipun rugi perajin masih tetap menjalankan usahanya karena biaya variabel dapat tertutupi. |
| Abstrak (Inggris) | Tofu is one type of food source of protein with soy-based. Tofu making business has great prospects to be developed as a real sector that is able to sustain and improve welfare for the people of Indonesia. Selanegara Village is a tofu industry center in Purbalingga Regency. The tofu industry business in Selanegara Village has not experienced development because the income earned is relatively small, their economic condition is still not prosperous. This study aims to 1) Analyze the amount of costs, revenues and net income obtained by the craftsman 2) Analyze the amount of the lower limit of income earned by the craftsman 3) Analyze the condition of the tofu business against the lower limit of prices. The study was conducted in September-October 2019. Determination of respondents was carried out by census and site selection was done purposively. The research method used is the survey and analysis methods used include cost and income analysis, lower income analysis, marginal approach analysis and descriptive analysis. The results showed that: (1) Tofu craftsmen in Selanegara Village received an average net income of Rp3,988,172 with an average production cost of Rp19,600,141, an average income of Rp23,588,313 with a small number of tofu sold on average averaged 54,100 pieces, tofu was 9,341 pieces and large tofu was 2,435 pieces. (2) The average lower income limit is -Rp. 2,207,630, and there is a chance of loss. (3) The condition of the tofu business in Selanegara Village on average loses when selling fried tofu with a lower tofu price limit of small Rp190 / piece, medium tofu Rp769 / piece and large tofu Rp1.666 / piece, even though the loss of the craftsman still continues to run his business because variable costs can be covered. |
