| Abstrak | Penelitian bertujuan untuk mengetahui warna dan total padatan kefir susu sapi dengan kombinasi ekstrak kayu pada level berbeda (0%, 1%, 2%, dan 3%). Hasil analisis variansi menunjukan kombinasi ekstrak kayu secang berpengaruh nyata (P<0.05) terhadap nilai L* kolorimeter dan berpengaruh sangat nyata (P<0.01) terhadap nilai a* dan b* kolorimeter, dan tidak berpengaruh nyata (P>0.05) terhadap total padatan. Hasil uji BNJ nilai L* adalah P0 berbeda nyata dengan P3, tidak berbeda nyata dengan P1 dan P2. P1 tidak berbeda nyata dengan P2 dan P3 serta P2 tidak berbeda nyata dengan P3. Hasil uji BNJ nilai a* adalah P0 berbeda nyata dengan P2 dan P3, tidak berbeda nyata dengan P1. P1 berbeda nyata dengan P3, tidak berbeda nyata dengan P2 serta P2 tidak berbeda nyata dengan P3. Hasil uji BNJ nilai b* P0 berbeda nyata dengan P1, P2, dan P3. P1 berbeda nyata dengan P2 dan P3, serta P2 berbeda nyata dengan P3. Kefir susu sapi kombinasi ekstrak kayu secang sebesar 3% memiliki intensitas warna kuning tertinggi, namun memiliki total padatan yang sama dengan kefir pada kombinasi ekstrak kayu secang 0%, 1%, dan 2%. |
| Abstrak (Inggris) | The study aims to determine the color and total solidity of cow milk kefir with a combination of wood extracts at different levels (0%, 1%, 2%, and 3%). The results of the analysis of variance showed the combination of secang wood extract significantly (P <0.05) on the L * colorimeter value and significantly (P <0.01) on the a * and b * colorimeter values, and had no significant effect (P> 0.05) on the total solids . BNJ test results for L * value are P0 significantly different from P3, not significantly different from P1 and P2. P1 is not significantly different from P2 and P3 and P2 is not significantly different from P3.
