| Abstrak | Produk yang potensial untuk dikembangkan dari air kelapa adalah minuman isotonik. Untuk mendapatkan hasil produk minuman isotonik air kelapa yang sukses di pasar, maka perlu dilakukan upaya perancangan produk salah satunya dengan metode Quality Function Deployment (QFD). Tujuan dari penelitian ini adalah mengetahui atribut persyaratan konsumen dan parameter teknis produksi. Langkah penelitian meliputi (4 langkah) yaitu penentuan persyaratan konsumen, penyusunan parameter teknis, penyusunan matriks hubungan antara persyaratan konsumen dan parameter teknis serta perhitungan kumulatif pemenuhan keinginan konsumen berdasarkan persyaratan konsumen dan parameter teknis. Hasil penelitian menunjukan terdapat 17 atribut persyaratan yang diinginkan konsumen. Dari hasil penelitian juga menunjukan terdapat 13 parameter teknis yaitu pemilihan varietas kelapa unggul, persiapan bahan baku dan kemasan, persiapan air kelapa, penyaringan, penambahan gula, homogenisasi, sterilisasi non-thermal, penambahan pengawet, pengisian dan pengemasan aseptik, pelabelan, pengendalian mutu, registrasi BPOM dan registrasi halal MUI. |
| Abstrak (Inggris) | Products that have the potential to be developed from coconut water are isotonic drinks. To get a successful coconut water isotonic drink product in the marketplace, so it is necessary to make product design efforts, one of which is the Quality Function Deployment (QFD) method. The purpose of this study was to determine the attributes of consumer requirements and technical parameters of production. The research steps include (4 steps) namely specifies requirements for consumer, preparation of technical parameters, matrix formulation of the relationship between customer requirements and technical parameters, as well as the cumulative calculation of the fulfillment of consumer desires based on consumer requirements and technical parameters. The results showed there are 17 attributes desired requirements of consumers. and the results also showed that there are 13 technical parameters, namely selection of superior coconut varieties, preparation of raw materials and packaging, preparation of optimal mature coconut water, filtration, the addition of sugar, homogenization, non-thermal sterilization, the addition of preservatives, aseptic filling and packaging, labeling, quality control, BPOM registration and MUI halal registration. |
