AbstrakBayam mengandung asam folat yang tinggi sehingga diajurkan dalam makanan pendamping ASI tetapi mempunyai kemampuan menyerap nitrat yang tinggi. Brokoli juga merupakan tanaman yang mengandung asam folat. Penelitian ini bertujuan untuk menbandingkan rasio kadar nitrat terhadap asam folat dalam bayam cabut dan brokoli. Penelitian ini dilakukan dengan metode eksperimental laboratorium meliputi determinasi sampel, analisis kualitatif dan kuantitatif nitrat dan asam folat dalam bayam cabut dan brokoli menggunakan metode spektrofotometri UV-Vis. Data yang diperoleh digunakan untuk menghitung rasio kadar nitrat terhadap asam folat dalam bayam cabut dan brokoli, kemudian dibandingkan menggunakan wilcoxon sum rank test pada taraf kemaknaan 95%. Hasil analisis kualitatif menunjukan semua sampel positif mengandung nitrat dan asam folat. Hasil analisis kuantitatif menunjukkan rata-rata kadar nitrat bayam cabut 3438,205 ppm dan asam folat bayam cabut 16,736 ppm maka rata-rata rasio kadar nitrat terhadap asam folat bayam cabut 205,764. Rata-rata kadar nitrat brokoli 2339,475 dan asam folat brokoli 3,862 maka rata-rata rasio kadar nitrat terhadap asam folat brokoli 609,499 sehingga rasio kadar nitrat terhadap asam folat brokoli lebih tinggi dibanding bayam cabut.
Abstrak (Inggris)Spinach contains high folic acid so as the baby food complementary of breast feeding but yet has high ability to absorb nitrates. Broccoli also contain folic acid. The objective of this study was to compared nitrate levels to folic acid betwen broccoli and pull spinach. This research was conducted by laboratory experimental methods includeing determination samples, qualitative and quantitative analysis of nitrate levels and folic acid in pull spinach and broccoli used spectrophotometer UV-Vis method. The data obtained was used to accumulate nitrate levels ratio to folic acid in pull spinach and broccoli then it was compared use wilcoxon sum rank test at 95% significance level. The results of the qualitative analysis showed that all of the samples were positive in containing nitrate and folic acid. The results of quantitative analysis showed that average nitrate levels in pull spinach is 3438,205 ppm and folic acid levels in pull spinach is 16,736 so average ratio of nitrate levels of folic acid in pull spinach is 205,764. The average nitrate levels in broccoli is 2339,475 ppm and average folic acid levels in broccoli is 3,862 ppm so average ratio of nitrate levels of folic acid in broccoli is 609,499 it indicated that the ratio of nitrate levels to folic acid in broccoli was higher than in pull spinach.
